
Japanese considered Madai a king of fish and it is often served at festive occasions. It has a beautiful, coppery-red color skin and large head with a curved back profile. Madai is vastly farm-raised throughout Japan but the unique aqua farming process makes Miyabi Madai one of the most popular brands in Japan.
The farming is based offshore, close to the Seto Inland Sea where the water is calm and warm throughout the year. The fish are raised in a stress-free environment and fed with a specially formulated feed. This unique formula of feed contributes to the taste of fish. The farm-raised Madai often leaves an unnatural fishy aftertaste, but you do not taste that from eating Miya bi Madai. It has a soft texture and a hint of sweetness.
